The McNichol family at Banksia Springs Farm

Our story

We're the McNichols

A family farm at Wilsons Downfall, on the Granite Belt right on the Queensland–NSW border.

Banksia Springs is our family farm. Steven and Julia and the kids raise grass-fed beef, pasture-raised pork, lamb and goat on the family's farms on the Granite Belt, and we hand every order over ourselves.

The land

Our farm sits about 20 minutes east of Stanthorpe in the Granite Belt high country, right on the Queensland–New South Wales border: 190 acres of open pasture, native bush and granite outcrops at altitude. Together with the rest of the family's farms, there are about 600 acres for the animals. Proper cold winters harden the pasture off, and warm summers grow it back.

We move the stock, rest the paddocks and put nothing synthetic on the ground. We're still getting the rotation right, and we say so. The full picture, feed by feed, is on How we farm.

The meat

Every animal we sell was born and raised on the family's farms. Our beef is grass-fed and grass-finished Angus. The pigs live outdoors all year on certified organic feed and organic apple pulp. There are no hormones, no vaccines, no routine drenching and no feedlots. If an animal ever needs treating, it gets treated, and then it's sold elsewhere, never to you.

We take our own animals to the abattoir at Yangan, a small load at a time. Our butcher in Tenterfield cuts and vacuum-packs every order and dry-cures and smokes our bacon, and we drive it down frozen to our pickup stops around Brisbane and the Sunshine Coast. There are no middlemen and no warehouses between our paddocks and your freezer.

The family

Our kids are growing up with the animals. When you buy from us, you're dealing with the family that raised your dinner.

What we stand for

  • Honest food. We tell you exactly how the animals are raised, including the bits we're still fixing.
  • Rest the country. Move the stock, rest the paddocks, nothing synthetic on the ground.
  • Nothing wasted. Whole-animal butchery: bones for broth, fat for rendering, bones for the dog.
  • Straight from us. No middlemen between our paddocks and your freezer.

Come and stay

Camp under the Granite Belt stars

We host campers on our own 190-acre farm, through Hipcamp: bush and paddocks to explore, fire pits, a dam, kangaroos at dusk, and no phone signal to speak of.

The gems

Boulder opals we dug ourselves

Steven and his son dig boulder opal on a mate's lease near Opalton in western Queensland. Every stone is natural and untreated, and each one is sold as its own piece.
